Egg muffins are the perfect recipe to make on a snowy winter day. This recipe is great if you do not like to make breakfast because it can be made a few days in advance. I love to make these egg muffins for the week because they’re easy to prepare, and they keep me full.

  Egg Muffin Recipe

You’ll Need:

1 Muffin Pan

1 whisk

1 Mixing Bowl

 5 Eggs

3/4 cup of Cheddar Cheese

3/4 cup of White Sharp Cheddar Cheese

3/4 cup of heavy cream

1 pack of Applegate pepperoni

1 tbsp of water (this helps the eggs to stay moist)

  Coconut Oil Spray

Instructions:

Place eggs, cheese, heavy cream, and 1 tbsp of water into a mixing bowl, and whisk it all together. Then spray your muffin pan with coconut oil. Place a slice of pepperoni in each pan. Next pour your egg mixture into your muffin pan. Bake in the oven at 375 degrees for 20 minutes. To ensure that your eggs are cooked all the way take a knife and poke it through the middle of the muffin, and if it comes out clean it’s cooked.
