
I woke up this morning thinking about warm fluffy pancakes, drizzled with syrup; adorned with sweet butter on top. Since my birthday this past Tuesday, I have been off my Paleo and Low Carb lifestyle, but I’m determined to get back on track this week. To make my Paleo pancakes I used Otto’s Natural’s cassava flour. The Otto’s flour is light and crisp when used for frying. In the next few weeks, I will do a whole review on the Otto’s Naturals.
Mini Chocolate Chip Paleo Pancakes
1 cup Otto’s Cassava flour
3tbsp of melted coconut oil
1tsp Agave Nectar
1tbsp Coconut Sugar
1tsp Baking Soda
1 tsp Cinnamon Powder
1 tbsp Unsweetened Coconut Milk
1/2 cup Heavy Cream
1 Organic Egg
1tbsp Enjoy Life/ Ghirardelli mini chocolate chips
1tsp Vanilla Extract

Avocado Oil Spray
Instructions:
In a large bowl mix all ingredients together with a whisk. Spray your pan with some avocado oil spray, and allow your pan to heat. Once your pan is heated pour some of your batter into the pan. Depending on how high you have your stove, you will need to cook the pancake for 1-3 minutes on each side.
