For the past few months, I have been testing out various alternative flours, and so far almond flour happens to be one of my favorites. It’s soft, moist, and fluffy, and it plays well with baking ingredients. One of my favorite almond flour brands is King Arthur because it is finely milled, and it reminds me of Gold Medal White Flour. When I ran out of my King Arthur almond flour, I decided to make my own using some Trader Joe’s unsalted sliced almonds. I pureed the Trader Joe’s almonds in my Cuisinart until it looked like flour. This process takes roughly around five minutes. 

Chocolate Chip Almond Cookies

1/2 cup  Almond Flour

1 Large Egg

3 tbsp Butter

1 tbsp Agave Nectar

1/4 tsp Vanilla Extract

1 pinch Cinnamon

1 tbsp Coconut Sugar

2 tbsp Enjoy Life Chocolate Chips

1/4 tsp Baking Powder

Instructions:

Place all ingredients into a large bowl and mix it together. Use a cookie scoop to form dough balls. Place cookie dough onto a greased cookie sheet, and bake at 375 for 10-15 minutes.
