Chocolate Chip Almond Cookies

For the past few months, I have been testing out various alternative flours, and so far almond flour happens to be one of my favorites. It’s soft, moist, and fluffy, and it plays well with baking ingredients. One of my favorite almond flour brands is King Arthur because it is finely milled, and it reminds me of Gold Medal White Flour. When I ran out of my King Arthur almond flour, I decided to make my own using some Trader Joe’s unsalted sliced almonds. I pureed the Trader Joe’s almonds in my Cuisinart until it looked like flour. This process takes roughly around five minutes.

Chocolate Chip Almond Cookies

1/2 cup  Almond Flour

1 tbsp Agave Nectar

1 pinch Cinnamon

1 tbsp Coconut Sugar

2 tbsp Enjoy Life Chocolate Chips

1/4 tsp Baking Powder

Place all ingredients into a large bowl and mix it together. Use a cookie scoop to form dough balls. Place cookie dough onto a greased cookie sheet, and bake at 375 for 10-15 minutes.

Paleo Banana Muffins

A few weeks ago, while searching for finely milled almond flour on, I found a box of Simple Mills Banana Muffin mix. After clicking on the item and reading its nutritional facts, I realized that this product has healthy ingredients. In addition to its healthy ingredients, it also is well suited for a Paleo and low carb lifestyle. These muffins are moist and high in fiber, which is important when you are on a low carb diet.

All Snowed In: Low Carb Egg Muffins

All Snowed In: Low Carb Egg Muffins

Egg muffins are the perfect recipe to make on a snowy winter day. This recipe is great if you do not like to make breakfast because it can be made a few days in advance. I love to make these egg muffins for the week because they’re easy to prepare, and they keep me full.

1 Mixing Bowl

 5 Eggs

3/4 cup of Cheddar Cheese

3/4 cup of White Sharp Cheddar Cheese

3/4 cup of heavy cream

1 pack of Applegate pepperoni

1 tbsp of water (this helps the eggs to stay moist)

  Coconut Oil Spray

Place eggs, cheese, heavy cream, and 1 tbsp of water into a mixing bowl, and whisk it all together. Then spray your muffin pan with coconut oil. Place a slice of pepperoni in each pan. Next pour your egg mixture into your muffin pan. Bake in the oven at 375 degrees for 20 minutes. To ensure that your eggs are cooked all the way take a knife and poke it through the middle of the muffin, and if it comes out clean it’s cooked.

Eggplant Rollatini Recipe

One of my favorite recipes to make is eggplant rollatini. It is the perfect dish to make when you have a lot of friends and family coming over to watch a football game. The great thing about this dish is it’s low in carbs, so you can eat it without any guilt!

Eggplant Rollatini Recipe

 2  Trader Joe’s Grilled Eggplant

2 cups shredded Mozzarella

1 jar of tomato sauce preferably Rao’s Marinara or Tomato Basil

1 ½ cups of Ricotta Cheese

1 egg

¾ cup heavy cream

1 tsp of FlavorGod Garlic Lover’s Seasoning

1 tsp of Black Pepper

1 tsp of basil

Bake Trader Joe’s Grilled Eggplant at 375 for 15 minutes. Next lay the eggplant onto a plate. The eggplant will release some excess oil and water, so you should allow enough time for it to completely drain, or else you will have a soggy eggplant rollatini.

In a bowl combine ricotta cheese, ¾ mozzarella, egg, and seasonings. Spray an 8×11 pan with coconut oil spray. Then place ¾ of a cup of tomato sauce onto the pan. Next lay eggplant out like lasagna noodles.

Then spread some tomato sauce on top of the eggplant. After that spread  ¾ of the ricotta mixture on top of the tomato sauce. Sprinkle some mozzarella cheese. Once you have finished that layer, add another layer of eggplant, but make sure you line the eggplant up in a row like lasagna noodles. Bake in the oven at 375 degrees for 30 minutes on the bottom rack of the oven.  After 30 minutes has passed place the dish on the first shelf of the oven for 15 minutes.

Bon appetit!!
